These Bruschetta Turkey Boats = LOVE! Why? Because they are EASY and OH SO GOOD! I am all about these boats! My husband agrees as well! We enjoyed them for both dinner and lunch the next day. I definitely plan to add them to my regular dinner rotation. Will you?
Bruschetta Turkey Boats

Ingredients
- 1.25 lbs lean ground turkey
- 5 Zucchinis, halved
- Herbamare Seasoning (from vitacost)
- ¼ cup shredded Parmesan
- 1 cup Fresh Bruschetta (I got mine from Trader Joes), drained of most liquid
Instructions
- Cook the turkey and season it with Herbamare seasoning on a pan with a bit of coconut oil until cooked.
- While that is cooking, half the zucchini and scoop out the seeds/insides.
- Place on a baking sheet with non- stick spray, set aside.
- Once turkey is cooked mix in Parmesan and bruschetta.
- Fill zucchinis with the turkey filling.
- Bake at 350F for 15 mins sprinkle Parmesan over the top for last 2 minutes.
