So, my girlfriend Jill has been bringing in this Trader Joe’s pre-packaged Butternut Squash & Creamed Spinach Gratin to work everyday. It is sooo delicious, however, it is not so healthy. So, I decided I needed to HEALTHIFY this delicious recipe so I could eat it guilt free! I am sooo happy with how this turned out! The whole family loved it!  It is the perfect side dish! Hopefully it will get Jill approved too!

Butternut Squash & "Creamed" Spinach Casserole
Recipe type: Side Dish
  • 2 bags Trader Joe's Pre- cut Butternut Squash (or 4 cups cubed butternut squash)
  • 1 tablespoon Coconut Oil, melted
  • Salt and Pepper, to taste
  • 4 cups packed Baby Spinach
  • ½ teaspoon Minced Garlic (or 1 garlic clove minced)
  • ¼ of a Yellow Onion, diced
  • 1 cup Non Fat Greek Yogurt
  • ¼ cup Unsweetened Almond Milk
  • Dash of Nutmeg
  • Nutritional Yeast
  1. Preheat oven to 400F.
  2. Toss the butter nut squash cubes in the the coconut oil and place in a small casserole dish so that all the cubes fit in a single layer.
  3. Sprinkle with salt and pepper.
  4. Place in the oven for 20- 25 minutes mixing them halfway through.
  5. While that is cooking, saute the onion and garlic on a pan on medium heat with a little oil until onion becomes clear.
  6. Then mix in the spinach.
  7. Once the spinach begins to wilt add the greek yogurt, almond milk, and nutmeg.
  8. Allow that too cook for a minute.
  9. Once the 20 minutes is up take your butternut squash out of the oven and add the spinach layer so that it covers the entire top of the casserole dish.
  10. Then add nutritional yeast on top of the spinach layer.
  11. Cook for another 10 minutes.
  12. Then eat up!
Don't have nutritional yeast? This would also be great with Parmesan!
