Lately I have been craving pasta- and I mean the heavy cream rich fatty kind of pasta! So, I decided to try and make a “creamy” pasta without the cream! This healthified pasta uses NO cream and Quinoa Pasta instead of regular pasta. It fixed my craving right up!
"Creamy" Chicken Pasta"

Ingredients
Pasta
- 2 Chicken Breasts, chopped
- Original Mrs. Dash Seasoning, to taste
- 1 teaspoon Minced Garlic (2 Garlic Cloves Minced)
- 2 cups Uncooked Quinoa Pasta Shells
- 2 cups packed Spinach
- 2 .25 can Sliced Black Olives
- ½ cup Sun Dried Tomatoes, julienne cut
Pasta Sauce
- ½ cup Non Fat Greek Yogurt
- 1 tablespoon Unsweetened Vanilla Almond Milk
- ½ tablespoon Olive Oil
- ⅛ cup Grated Parmesan
- Salt and Pepper, to taste
Instructions
- Place chopped chicken, Mrs. Dash Seasoning and minced garlic in a pan with some oil and cook until the chicken pieces are no longer pink and chicken is cooked.
- While the chicken is cooking, cook the pasta according to the directions.
- Once chicken is cooked place the spinach in the pan with the chicken and let it cook for approximately 2 minutes until spinach is wilted. Once cooked drain any excess liquid in the pan.
- Combine the pasta with the chick and spinach.
- Add in the olives and sun dried tomatoes.
- Mix together the greek yogurt, almond milk, olive oil, parmesan, salt and pepper.
- Then mix the sauce in with the pasta and serve!

I just made this dish and it was amazing!!!! The only thing I did different was I added fresh chopped parsley to the mixture. This really satisfies my cravings for creamy pasta!

How do you think vanilla Greek yogurt would work would this recipe, it’s all I have on hand right now.
You could try it, but I would not recommend it. Vanilla greek yogurt is very sweet and has a lot of added sugar. So, it is probably too sweet for this savory dish.

Want to make this amazing recipient but I’m allergic to almonds. Do you have an alternative for the almond milk?
You can use any kind of milk you want: dairy, soy, rice, coconut etc. whatever milk you normal drink should be fine
