Don’t you just love fried foods? For me, even though I love eating healthy, I also LOVE eating unhealthy too! That is why I am always looking for ways to take my unhealthy favorites and healthify them! Well I did just that with this Crispy Cheddar Chicken. Imagine fried cheesy goodness… that’s not actually fried and has only a little cheese!! Have you heard about Quest Nutrition‘s new Protein Chips? Well let me tell you they are pretty amazing!!! For a whole bag they have only 120 calories, 5 grams carbs, and 21 grams protein!!! I have become slightly (only slightly :)) addicted to them, especially the Cheddar & Sour Cream flavor! I decided to use them in this recipe and it turned out way better than I had envisioned. These chips could also be replaced with Baked Lays or Brown Rice Puffs!

Crispy Cheddar Chicken

  • 2 Boneless Skinless Chicken Breasts
  • 1 Bag Quest Protein Chips Cheddar & Sour Cream Flavor , Crushed (could also use Baked Lays or Brow Rice Krispies)
  • ¼ cup Sharp Cheddar Cheese
  • ½ teaspoon Garlic Salt
  • ½ tablespoon Olive Oil
  • ¼ cup Non Fat Greek Yogurt
  1. Preheat the oven to 350 degrees Fahrenheit and cover a baking sheet with tinfoil sprayed with non-stick spray.
  2. In a shallow bowl combine the crushed chips, cheddar cheese, garlic salt, and olive oil.
  3. Brush both sides of the chicken breasts with the yogurt.
  4. Coat with chip mixture by pressing the chicken gently on the chip mixture for it to stick.
  5. Place on baking sheet and bake for approximately 30 minutes or until chicken is cooked through.
