Toasted Coconut Oat Bran Pancakes

Ingredients
  • 1 & ¼ cup Oat Bran
  • ¾ cup Liquid Egg Whites (or 4 egg whites)
  • 1 Banana
  • ¼ cup Unsweetened Vanilla Almond Milk
  • ¼ teaspoon Coconut Extract
  • 1 teaspoon Baking Powder
  • Topping: Unsweetened Shredded Coconut, toasted in toaster or oven until browned and fragrant
Instructions
  1. Blend all ingredients together.
  2. Heat a pan on medium heat and spray with non-stick spray.
  3. Spoon ¼ cup of batter per pancake on the heated skillet.
  4. Half way through flip the pancake and cook on the other side.
  5. Top with toasted coconut and maple syrup!
