Stuffed Pasta Shells

Ingredients
  • 12 oz (340 grams) Jumbo Pasta Shells
  • Pinch of Salt
  • 1 pound Ground Italian Chicken Sausage (could also use ground turkey or chicken with italian seasoning).
  • 2 cups Low Fat Cottage Cheese
  • 2 teaspoon Red Pepper Flakes
  • ¼ teaspoon Garlic Powder
  • 2 tablespoon Mozzarella Cheese
  • 2 tablespoon Parmesan Cheese
  • 1 jar All Natural Marinara
Instructions
  1. Place water and a pinch of salt in a large pot and bring to boil.
  2. Place pasta in water and cook per directions to al dente (I cooked mine for 8 minutes).
  3. Strain the pasta.
  4. While the pasta is cooking preheat the oven to 350 degrees Fahrenheit and spray a 9x13 baking dish with non-stick spray, set aside.
  5. Place coconut oil on a pan with medium heat and cook the ground chicken sausage breaking it into small pieces with a wooden spoon until completely cooked through.
  6. In a blender or food processor blend the low fat cottage cheese until smooth.
  7. Mix the red pepper flakes, garlic powder, cheeses and cooked chicken sausage into the cottage cheese until fully combined.
  8. Place the pasta shells into the baking dish and stuff each shell with the cottage cheese mixture.
  9. Pour the entire jar of marinara over the pasta shells and sprinkle with more parmesan and mozzarella.
  10. Bake for approximately 10-15 minutes until everything is heated and cheese is melted
