Pumpkin Spice Pancakes

Ingredients
Pancakes
  • 1 cup Oat Flour (or 1 cup ground oats)

  • 1 Stevia Packet
  • ⅛ teaspoon Pumpkin Pie Spice
  • 1 teaspoon Baking Powder
  • ¼ cup Pumpkin Puree
  • 1 cup Unsweetened Vanilla Almond Milk
  • 2 Egg Whites
  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Butter Extract
Pumpkin Cream
  • ½ cup Non Fat Greek Yogurt
  • ⅛ cup Pumpkin Puree
  • 1 Stevia Packet
  • ⅛ teaspoon Pumpkin Pie Spice
Instructions
  1. Mix together all of the pancake ingredients until smooth.
  2. On a griddle or pan sprayed with non-stick spray on medium heat, place about ΒΌ cup of batter on pan per pancake.
  3. Allow it to cook flipping halfway through.
  4. While the pancakes are cooking make the Pumpkin Cream by blending it in a mini food processor or with a spoon until smooth and creamy. j
  5. Top the pancakes with the cream, cinnamon and syrup if you want and devour!
