Healthified Jalapeño Mac & Cheese

Ingredients
  • 1 box Quinoa Pasta (I used the elbow shape)
  • ¼ cup Non Fat Greek Yogurt
  • ¼ cup Low Fat Cottage Cheese
  • 1 teaspoon Ghee (or butter)
  • 1 tablespoon Unsweetened Vanilla Almond Milk
  • ¼ teaspoon Cayenne Pepper
  • ⅛ teaspoon Mustard Powder
  • ⅛ teaspoon Garlic Powder
  • Salt & Pepper, to taste
  • ½ cup Mac & Cheese Blend (Cheddar, American & Swiss)
  • 1 Jalapeño, diced
Instructions
  1. Preheat the oven to 350 degrees fahrenheit.
  2. Cook pasta per directions on the box.
  3. While pasta is cooking blend in a food processor or blender the greek yogurt, cottage cheese, almond milk, and all the spices until smooth and creamy.
  4. Mix the cheese into the yogurt cottage cheese blend.
  5. Then mix the cheese blend with the pasta.
  6. Mix diced jalapeños into the pasta.
  7. Top with some more cheese.
  8. Place in the oven for approximately 5 minutes or until the cheese is melted.
