Peach Cobbler Pancakes

  • 1 cup Oat Flour (or 1 cup ground oats)

  • 1 teaspoon Baking Powder
  • 1 stevia packet
  • ¼ teaspoon Nutmeg
  • ½ teaspoon Cinnamon
  • ¼ cup Non fat Greek yogurt
  • 1 cup Unsweetened Vanilla Almond Milk
  • 2 Egg Whites
  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Butter Extract
Peach Topping
  • 2 small peaches, chopped
  • ½ tsp coconut oil
  • ½ tbsp honey
  • Optional: top with granola
  1. Mix together all of the pancake ingredients until smooth.
  2. On a griddle or pan sprayed with non-stick spray on medium heat, place about ¼ cup of batter on pan per pancake.
  3. Allow it to cook flipping halfway through.
  4. While the pancakes are cooking make the Peach Topping by cooking in a pan on medium heat the peaches with the coconut oil and honey.
  5. Top the pancakes with the peach topping and syrup if desired!
