Tuna Veggie Cous Cous
Recipe type: Entree
  • 1 cup Pearl/Isreali Cous Cous
  • 1¼ cup Water
  • Dash of Salt
  • 1 Cucumber, chopped
  • ¼ cup Capers
  • ½ cup Kalamata Olives, chopped
  • 1 Red Bell Pepper, chopped
  • Juice of 1 Lemon
  • 2- 5 oz cans No Salt Wild Albacore Tuna, drained (or tuna of choice)
  1. Bring water to a boil.
  2. Add cous cous cover and simmer for 8-10 minutes, stirring occasionally.
  3. Once cous cous is cooked mixed in all of the other ingredients.
  4. Refrigerate until ready serve.
  5. Serve cold.
