Sweet Potato Nachos

Sweet Potato Chips
  • 2 Medium/Large Sweet Potatoes, thinly sliced
  • Olive oil
  • Sea Salt & Pepper
Black Bean Mixture
  • 1 Green Bell Pepper, diced
  • ½ Red Onion, chopped
  • 1 teaspoon Minced Garlic( or 2 cloves minced)
  • 1 can Black Beans, half the juice drained
  • Cumin & Chili Powder, to taste
Ground Turkey
  • 1.25 lbs Extra Lean Ground Turkey
  • Mexican Seasoning, to taste
Optional Toppings:
  • Salsa
  • Greek Yogurt or Sour Cream
  • Guacamole
  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Toss or spray sliced sweet potatoes with olive oil.
  3. Sprinkle with sea salt and pepper.
  4. Then place sweet potatoes on a cookie sheet lined with parchment paper.
  5. Bake for about 15 minutes.
  6. Flip and bake for another 15-20 minutes until the potatoes become a light golden brown or become crispy.
  7. While the sweet potatoes are baking, heat a skillet with some olive oil and saute the onion, garlic, and bell pepper.
  8. Once the onion becomes translucent add the black beans, cumin and chili powder.
  9. Saute for a few minutes then allow it to simmer for a few minutes, set aside.
  10. Place ground turkey in a pan with the Mexican Seasoning.
  11. Cook until cooked through.
  12. Once sweet potatoes are done.
  13. Place them on a plate and top with turkey, black bean mixture, salsa and greek yogurt.
  14. DEVOUR :)
This easily can be made vegan or vegetarian by omitting the ground turkey and the greek yogurt!
