Fall Salad

Ingredients
Salad
  • Baby Spinach
  • 2 Persimmons, chopped
  • 1 Pear, chopped
  • ⅓ cup Pomegranate Arils
  • 8 oz Fresh Mozzarella Balls, halved
  • 2 Chicken breasts, chopped (I used leftover of my Orange Juice Chicken)
Dressing
  • ¼ cup Balsamic Vinegar
  • 1 tablespoon Coconut Oil, melted
Instructions
  1. Mix together all salad ingredients.
  2. Then mix together dressing.
  3. Toss and Serve!
Notes
Dressing can easily be doubled to serve more!
