This breakfast was seriously a party in my mouth! Which is why I decided to call it a Fiesta Breakfast Hash.  The homemade turkey chorizo has all the flavors of pork chorizo, but healthier! This breakfast pops with flavors and nutrients! It is even great as leftovers! My hubby and I both ate it the next day at work and were in heaven! Next time you are having people over for breakfast or brunch put this recipe on the menu because it serves 5 people and is sure to be a crowd pleaser!

Ingredients
  • 1 lb Lean Ground Turkey
  • ¼ cup Apple Cider Vinegar
  • 1 tablespoon Bragg Liquid Aminos
  • 1 tablespoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Red Pepper Flakes
  • ½ teaspoon Oregano
  • ¼ teaspoon Cayenne Pepper
  • 2 Medium Sweet Potatoes, chopped
  • 1 Small Bell Pepper, chopped
  • 1 Small Red Onion, chopped
  • 1 4 oz can Diced Green Chiles
  • 2 handfuls Baby Spinach, chopped
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Heat a little oil in a large cast iron skillet over medium heat.
  3. Add the turkey and all the spices and cook, while stirring and breaking up the meat with the back of a wooden spoon.
  4. In a separate pan with a little coconut oil place the chopped sweet potato.
  5. Once it starts to soften ad in the onion, bell pepper, green chiles.
  6. Cook until veggies soften and lightly brown.
  7. Mix the cooked veggies, including the chopped spinach in the skillet with the turkey.
  8. Using a spoon, make 5 egg indentations in the mixture.
  9. Gently crack in eggs.
  10. Place skillet in oven and let bake for approximately 20 minutes until egg whites are cooked.
