Oh Mac & Cheese why are you so amazing?! And why are you so full of calories and fat?! I am not going to lie, whenever I am feeling sad or down I always turn to the comfort food Mac & Cheese to make me feel better. However, I’ve been craving it a lot more lately, and knew if I was going to indulge in this delicious meal I was going to have to “healthify” it. Plus, once I added jalapeños I truly was in heaven! This recipe turned out so great that I had to share it with all of you! I hope it can provide you comfort on those nights where you need it
Healthified Jalapeño Mac & Cheese

Ingredients
- 1 box Quinoa Pasta (I used the elbow shape)
- ¼ cup Non Fat Greek Yogurt
- ¼ cup Low Fat Cottage Cheese
- 1 teaspoon Ghee (or butter)
- 1 tablespoon Unsweetened Vanilla Almond Milk
- ¼ teaspoon Cayenne Pepper
- ⅛ teaspoon Mustard Powder
- ⅛ teaspoon Garlic Powder
- Salt & Pepper, to taste
- ½ cup Mac & Cheese Blend (Cheddar, American & Swiss)
- 1 Jalapeño, diced
Instructions
- Preheat the oven to 350 degrees fahrenheit.
- Cook pasta per directions on the box.
- While pasta is cooking blend in a food processor or blender the greek yogurt, cottage cheese, almond milk, and all the spices until smooth and creamy.
- Mix the cheese into the yogurt cottage cheese blend.
- Then mix the cheese blend with the pasta.
- Mix diced jalapeños into the pasta.
- Top with some more cheese.
- Place in the oven for approximately 5 minutes or until the cheese is melted.
