One of my followers on instagram challenged me to re-create one of her favorite guilty pleasures: Chocolate Chip Cookie Dough Bars. Of course the first thing I thought was “Challenge Excepted!” Does anyone else watch How I Met Your Mother? Or is that just me… Anyway, I am BEYOND EXCITED with how these turned out! These are soooo delicious and completely healthy and dairy free! My family and friends approved and even went for seconds (or thirds)!

Healthy Chocolate Chip Cookie Dough Bars

Ingredients
Cookie Dough Layer
  • 2 cups Old Fashioned Oats
  • ½ cup Baking Stevia
  • ½ cup Unsweetened Vanilla Almond Milk
  • ½ teaspoon Better Body Foods Vanilla Extract
  • ½ teaspoon Butter Extract
  • ½ tablespoon Honey
  • ½ cup Enjoy Life Mini Semi Sweet Chocolate Chips (these are dairy, nut and soy free)
Chocolate Layer
  • ⅛ cup Unsweetened Cacao Powder
  • 1 tablespoon Better Body Foods Coconut Oil
  • 1 tablespoon Peanut Butter
  • 2 tablespoon Unsweetened Vanilla Almond Milk
  • ½ teaspoon Better Body Foods Vanilla Extract
  • ½ tablespoon Honey
Instructions
  1. Line a bread loaf pan with plastic wrap.
  2. First blend the oats in a food processor or blender until they turn into a flour consistency.
  3. Then place all cookie dough ingredients in the food processor EXCEPT the chocolate chips.
  4. Blend until smooth.
  5. Once ingredients are blended together fold in the chocolate chips.
  6. Press the cookie dough in the pan. And place in the refrigerator until done with the chocolate layer.
  7. Place all the chocolate layer ingredients in a food processor or blender and blend until creamy.
  8. Using a spatula, spread the chocolate layer over the chilled cookie dough layer.
  9. Refrigerate until chocolate layer hardens.
  10. Slice and Serve cold.
Notes
Can make this dessert vegan by using agave nectar in place of the honey.
