This dish is just bursting with flavor!! The Miso Ginger flavor paired with all the veggies and chicken makes for an awesome meal! Miso Ginger Chicken Quinoa

Ingredients
- 2 Boneless Skinless Chicken Breasts, chopped into bite size
- Original Mrs. Dash Seasoning, to taste
- 1 cup Tricolore Quinoa (any quinoa will work)
- 1¾ cup Miso Ginger Broth (I got this broth from Trader Joe's)
- ¼ cup White Wine Vinegar
- 2 heaping cups Asparagus, chopped
- 1½ cups Shredded Carrots
- 1 cup shelled Edamame
Instructions
- In a pan with coconut oil or non stick spay cook your chicken with the Mrs. Dash Seasoning.
- While the chicken is cooking place the quinoa, miso ginger broth, and white wine vinegar in a pot on medium/low heat and bring to a boil.
- Cover, reduce heat to low and simmer until water is absorbed.
- Set aside off the heat for 5 minutes; uncover and fluff with a fork.
- While the quinoa is cooking steam the carrots and asparagus until cooked.
- Mix together the chicken, quinoa, asparagus, carrots and edmame.
- Optional: Pour a little more Miso Ginger Broth and White Wine Vinegar if you want a stronger flavor.
