This dish is just bursting with flavor!! The Miso Ginger flavor paired with all the veggies and chicken makes for an awesome meal! Miso Ginger Chicken Quinoa

Ingredients
  • 2 Boneless Skinless Chicken Breasts, chopped into bite size
  • Original Mrs. Dash Seasoning, to taste
  • 1 cup Tricolore Quinoa (any quinoa will work)
  • 1¾ cup Miso Ginger Broth (I got this broth from Trader Joe's)
  • ¼ cup White Wine Vinegar
  • 2 heaping cups Asparagus, chopped
  • 1½ cups Shredded Carrots
  • 1 cup shelled Edamame
Instructions
  1. In a pan with coconut oil or non stick spay cook your chicken with the Mrs. Dash Seasoning.
  2. While the chicken is cooking place the quinoa, miso ginger broth, and white wine vinegar in a pot on medium/low heat and bring to a boil.
  3. Cover, reduce heat to low and simmer until water is absorbed.
  4. Set aside off the heat for 5 minutes; uncover and fluff with a fork.
  5. While the quinoa is cooking steam the carrots and asparagus until cooked.
  6. Mix together the chicken, quinoa, asparagus, carrots and edmame.
  7. Optional: Pour a little more Miso Ginger Broth and White Wine Vinegar if you want a stronger flavor.
