With summer finally here I get super excited about all  my favorite seasonal fruits: strawberries, plums, apricots, watermelons, cherries, and of course PEACHES! I absolutely love peach cobbler, and so in the spirit of summer I decided to make a play on my beloved peach cobbler and make them into pancakes! My husband and I ate this on our patio outside and it was pure happiness. The only thing that would have made it better is if we were on the beach and someone else had made them for me :)

Ingredients
Pancakes
  • 1 cup Oat Flour (or 1 cup ground oats)
  • 1 Scoop Vanilla About Time Protein Powder (25% off code: FANTASTICALLYFIT)
  • 1 teaspoon Baking Powder
  • 1 stevia packet
  • ¼ teaspoon Nutmeg
  • ½ teaspoon Cinnamon
  • ¼ cup Non fat Greek yogurt
  • 1 cup Unsweetened Vanilla Almond Milk
  • 2 Egg Whites
  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Butter Extract
Peach Topping
  • 2 small peaches, chopped
  • ½ tsp coconut oil
  • ½ tbsp honey
  • Optional: top with granola
Instructions
  1. Mix together all of the pancake ingredients until smooth.
  2. On a griddle or pan sprayed with non-stick spray on medium heat, place about ¼ cup of batter on pan per pancake.
  3. Allow it to cook flipping halfway through.
  4. While the pancakes are cooking make the Peach Topping by cooking in a pan on medium heat the peaches with the coconut oil and honey.
  5. Top the pancakes with the peach topping and syrup if desired!
