This side dish is super easy and felt very fall I absolutely love pomegranates and butternut squash so I figure why not combine the two into this heavenly creation?
Pomegranate Butternut Squash Quinoa

Ingredients
- 2 cups uncooked Quinoa
- 4 cups water
- ¼ cup pomegranate juice
- 12 oz or 1 bag chopped and cooked Butternut Squash (I get the chopped butternut squash from Trader Joe's)
- ½ cup pomegranate seeds
Instructions
- Place quinoa and water in a pot on medium heat and bring to a boil.
- Cover, reduce heat to low and simmer until water is absorbed about 15 to 20 minutes.
- Set aside off the heat for 5 minutes; uncover and fluff with a fork.
- Then mix in the pomegranate juice, pomegranate seeds, and butternut squash.
- Eat up!!!
Notes
I used tricolor quinoa, but any quinoa would work.
This could easily be made into a dinner by adding chopped chicken!

Do you think I could substitute the butternut squash for sweet potatoes? It is the day before Thanksgiving and everywhere is out of butternut squash! Do you think the flavors would work?
