I hate when I have to open a can of pumpkin puree for a recipe that only calls for 1 tbsp. Argh! So to remedy this frustrating situation I started freezing my left over pumpkin puree in regular old ice cube trays. When I need some pumpkin I just pop one of my pumpkin ice cubes in the microwave for 5 seconds and its ready to go!
NOTE: Pumpkin Ice Cubes make a great addition to smoothies! Yum!!!

I did that this fall, however I made my own fresh pumpkin puree. Time consuming but so good. I also puree and freeze avocado’s and spinach into cubes. Both are perfect to use up leftovers before they turn bad and are great in my smoothies.
Yeah its totally worth it. I love the idea of freezing avocado and spinach!
