I hate when I have to open a can of pumpkin puree for a recipe that only calls for 1 tbsp. Argh! So to remedy this frustrating situation I started freezing my left over pumpkin puree in regular old ice cube trays. When I need some pumpkin I just pop one of my pumpkin ice cubes in the microwave for 5 seconds and its ready to go!
NOTE: Pumpkin Ice Cubes make a great addition to smoothies! Yum!!!
