Okay okay okay- I know some may say that it is too late for me to be coming up with a pumpkin recipe. But, for a pumpkin lover like me all year is a good time to come up with a pumpkin recipe! Who’s with me?? During the holiday time, (and after) I love family time where we make breakfast. As you all know I have TONS of pancake recipes on my blog.

Before my hubby and I started to eat healthy we would always get the pumpkin pancake mix from Trader Joe’s and loved it. Once we got more into the healthy lifestyle and I read the ingredients,  I shunned it never to be eaten again (well more like only to be eaten on rare special occasions). However, I was never willing to try and create my own pumpkin pancake recipe because I just loved those ones so much and thought none could compare. Well, I was wrong! These can definitely compete with my beloved Trader Joe’s pumpkin mix and really they win because they are healthy too! :)

Pumpkin Spice Pancakes

Ingredients
Pancakes
  • 1 cup Oat Flour (or 1 cup ground oats)

  • 1 Stevia Packet
  • ⅛ teaspoon Pumpkin Pie Spice
  • 1 teaspoon Baking Powder
  • ¼ cup Pumpkin Puree
  • 1 cup Unsweetened Vanilla Almond Milk
  • 2 Egg Whites
  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Butter Extract
Pumpkin Cream
  • ½ cup Non Fat Greek Yogurt
  • ⅛ cup Pumpkin Puree
  • 1 Stevia Packet
  • ⅛ teaspoon Pumpkin Pie Spice
Instructions
  1. Mix together all of the pancake ingredients until smooth.
  2. On a griddle or pan sprayed with non-stick spray on medium heat, place about ¼ cup of batter on pan per pancake.
  3. Allow it to cook flipping halfway through.
  4. While the pancakes are cooking make the Pumpkin Cream by blending it in a mini food processor or with a spoon until smooth and creamy. j
  5. Top the pancakes with the cream, cinnamon and syrup if you want and devour!
