Okay okay okay- I know some may say that it is too late for me to be coming up with a pumpkin recipe. But, for a pumpkin lover like me all year is a good time to come up with a pumpkin recipe! Who’s with me?? During the holiday time, (and after) I love family time where we make breakfast. As you all know I have TONS of pancake recipes on my blog.
Before my hubby and I started to eat healthy we would always get the pumpkin pancake mix from Trader Joe’s and loved it. Once we got more into the healthy lifestyle and I read the ingredients, I shunned it never to be eaten again (well more like only to be eaten on rare special occasions). However, I was never willing to try and create my own pumpkin pancake recipe because I just loved those ones so much and thought none could compare. Well, I was wrong! These can definitely compete with my beloved Trader Joe’s pumpkin mix and really they win because they are healthy too!
- 1 cup Oat Flour (or 1 cup ground oats)

- 1 Stevia Packet
- ⅛ teaspoon Pumpkin Pie Spice
- 1 teaspoon Baking Powder
- ¼ cup Pumpkin Puree
- 1 cup Unsweetened Vanilla Almond Milk
- 2 Egg Whites
- ½ teaspoon Vanilla Extract
- ¼ teaspoon Butter Extract
- ½ cup Non Fat Greek Yogurt
- ⅛ cup Pumpkin Puree
- 1 Stevia Packet
- ⅛ teaspoon Pumpkin Pie Spice
- Mix together all of the pancake ingredients until smooth.
- On a griddle or pan sprayed with non-stick spray on medium heat, place about ¼ cup of batter on pan per pancake.
- Allow it to cook flipping halfway through.
- While the pancakes are cooking make the Pumpkin Cream by blending it in a mini food processor or with a spoon until smooth and creamy. j
- Top the pancakes with the cream, cinnamon and syrup if you want and devour!
Can’t wait to make these…love pumpkin! But how much is 1 stevia packet? I use pure stevia extract powder.
I use stevia in the raw packets. But you can just pour a little in at a time and taste the batter until it is sweet enough. Enjoy!
