Whenever I bake chicken breasts I always make sure to bake a few extra. Why? Because they are great to have on hand and so easy to throw in to different meals to add protein and to make a meal quick and nutritious! Below is one of my quick favorite go to meals using leftover chicken!


Chicken Jalapeno Popper Wrap

Chicken Jalapeno Popper Wrap
  • 1 Ezekiel Sprouted Grain Wrap
  • 1 jalapeno
  • ⅓ cup low fat cottage cheese
  • 1 tbsp Nutritional Yeast
  • shredded chicken breast
  • 2 pieces of cooked kabocha squash (can omit)
  1. Take one jalapeno. Dice it and saute it on a pan for a couple of minutes.
  2. Place ⅓ cup low fat cottage cheese on an Ezekiel wrap, then top it with 1 tbsp nutritional yeast, diced jalapeno, shredded chicken breast, and kabocha squash.
  3. Roll the wrap and cook an a pan for couple of minutes on each side until warm!
  4. Eat up!
Don't have nutritional yeast? Use regular cheese!
