Whenever I bake chicken breasts I always make sure to bake a few extra. Why? Because they are great to have on hand and so easy to throw in to different meals to add protein and to make a meal quick and nutritious! Below is one of my quick favorite go to meals using leftover chicken!
Chicken Jalapeno Popper Wrap
Ingredients
- 1 Ezekiel Sprouted Grain Wrap
- 1 jalapeno
- ⅓ cup low fat cottage cheese
- 1 tbsp Nutritional Yeast
- shredded chicken breast
- 2 pieces of cooked kabocha squash (can omit)
Instructions
- Take one jalapeno. Dice it and saute it on a pan for a couple of minutes.
- Place ⅓ cup low fat cottage cheese on an Ezekiel wrap, then top it with 1 tbsp nutritional yeast, diced jalapeno, shredded chicken breast, and kabocha squash.
- Roll the wrap and cook an a pan for couple of minutes on each side until warm!
- Eat up!
Notes
Don't have nutritional yeast? Use regular cheese!
