With the beginning of February here, I find myself getting all lovey and craving romantically romantic chocolate desserts! This dessert definitely fits the bill! Somewhere between a brownie and cake, I decided to call them cake bars! The combo of raspberry and chocolate is seriously a match that was made for Valentine’s Day! So, impress your loved one (or yourself ) with this delicious HEALTHY dessert! Happy Valentine’s Day everyone!
Raspberry Chocolate Cake Bars

Ingredients
Cake Bar
- 2 cups Oat Flour
- 3 tablespoons Cacao Powder (or Unsweetened Cocoa Powder)
- 1 teaspoon Baking Soda
- 1 cup Unsweetened Vanilla Almond Milk
- ½ cup Unsweetened Apple Sauce
- ⅓ cup Apple Cider Vinegar
- ⅓ cup Coconut Oil, melted
- 3 tablespoons Honey
- 1 teaspoon Vanilla Extract
- ½ cup Enjoy Life Mini Chocolate Chips
Raspberry Frosting
- 8 oz ⅓ Less Fat Cream Cheese, room temperature
- ¼ cup Low Fat Cottage Cheese
- ¼ cup Swerve Powdered Sugar Substitute (Swerve is a natural sweetener that has zero calories, is non-glycemic, non-GMO and all natural)
- 1-2 tablespoons Unsweetened Vanilla Almond Milk (only use if frosting is too thick)
- ¾ cup raspberries
Instructions
Cake Bars
- Preheat the oven to 350 degrees Fahrenheit.
- Spray a 9x13 pyrex dish with non-stick spray.
- In one bowl mix your dry ingredients and set aside.
- With your mixer or food processor, mix all the wet ingredients until fully combined.
- Then slowly pour in the dry ingredients and mix until combined.
- Fold in the chocolate chips.
- Pour the batter into the pyrex dish and spread evenly.
- Bake for approximately 20 minutes
Raspberry Frosting
- Blend all the ingredients until smooth and creamy.
- Once bars cool, frost with the frosting and cut into bars.
- If you are not using frosting these are GREAT served warm!
- Store frosted bars in refrigerator.
Notes
These cupcakes are great both with and without the frosting. In fact, without the frosting they are VEGAN!

Ooooh girl! These look great! Ever since I met you at the LA Fit Expo and you suggested the Quest White Chocolate Raspberry bars, I’ve been on a Chocolate – Raspberry kick like no other!
