I’ve mentioned before that I love weekends. Well, I love weekends for many many many reasons, but the same one I always mention is weekends mean PANCAKES. My hubby and I love them and can never get enough! I decided to try something different then usual. Different flavor and different ingredients, the main one being: Oat Bran. I talked about the health benefits and difference between oatmeal and oat bran in one of my first blog posts forever ago (please excuse the terrible photo I was a newbie). I love oat bran and use it all the time. So why not in pancakes? I will say it was definitely a success!
Toasted Coconut Oat Bran Pancakes

Ingredients
- 1 & ¼ cup Oat Bran
- ¾ cup Liquid Egg Whites (or 4 egg whites)
- 1 Banana
- ¼ cup Unsweetened Vanilla Almond Milk
- ¼ teaspoon Coconut Extract
- 1 teaspoon Baking Powder
- Topping: Unsweetened Shredded Coconut, toasted in toaster or oven until browned and fragrant
Instructions
- Blend all ingredients together.
- Heat a pan on medium heat and spray with non-stick spray.
- Spoon ¼ cup of batter per pancake on the heated skillet.
- Half way through flip the pancake and cook on the other side.
- Top with toasted coconut and maple syrup!
