This dish is a meal prep staple in our household. I love it because it is quick, easy, makes a ton, and gets better over time! The flavors of this dish pair perfectly together and I never get sick of it. If you are weird about tuna you can always use canned chicken, but I love it with tuna!
Tuna Veggie Cous Cous

Ingredients
- 1 cup Pearl/Isreali Cous Cous
- 1¼ cup Water
- Dash of Salt
- 1 Cucumber, chopped
- ¼ cup Capers
- ½ cup Kalamata Olives, chopped
- 1 Red Bell Pepper, chopped
- Juice of 1 Lemon
- 2- 5 oz cans No Salt Wild Albacore Tuna, drained (or tuna of choice)
Instructions
- Bring water to a boil.
- Add cous cous cover and simmer for 8-10 minutes, stirring occasionally.
- Once cous cous is cooked mixed in all of the other ingredients.
- Refrigerate until ready serve.
- Serve cold.
