Bruschetta Turkey Boats
Recipe type: Entree
  • 1.25 lbs lean ground turkey
  • 5 Zucchinis, halved
  • Herbamare Seasoning (from vitacost)
  • ¼ cup shredded Parmesan
  • 1 cup Fresh Bruschetta (I got mine from Trader Joes), drained of most liquid
  1. Cook the turkey and season it with Herbamare seasoning on a pan with a bit of coconut oil until cooked.
  2. While that is cooking, half the zucchini and scoop out the seeds/insides.
  3. Place on a baking sheet with non- stick spray, set aside.
  4. Once turkey is cooked mix in Parmesan and bruschetta.
  5. Fill zucchinis with the turkey filling.
  6. Bake at 350F for 15 mins sprinkle Parmesan over the top for last 2 minutes.
