Salmon With Berry Balsamic Glaze

Salmon With Berry Balsamic Glaze
Recipe type: Entree
  • 4 Salmon Filets
  • 1 heaping cup Frozen Berry Mix (blackberries, blueberries, raspberries) or Frozen Cherries
  • ½ cup Balsamic Vinegar
  • Smoked Paprika
  • Pepper
  1. Place frozen berries and balsamic vinegar in a pot.
  2. Simmer over medium heat for about 20 minutes.
  3. Then allow it to sit in the pot for 5-10 minutes to allow juices to thicken.
  4. While the glaze is simmering preheat the oven to 375 degrees Fahrenheit.
  5. Place salmon on a baking sheet covered with foil and sprayed with non-stick spray.
  6. Sprinkle desired amount of smoked paprika and pepper on each salmon filet.
  7. Bake salmon for approximately 15-20 minutes.
  8. Once salmon is cooked, top it with the berry glaze!
This is great with any frozen berry!

Can easily be halved or doubled depending on how many people you are serving!
