These turned out sooooo good! And I mean sooooooooooooooo good! For a while now I had been dreaming of combining spaghetti squash with ground turkey to make some sort of meatball. But, being the lazy person that I am, I had not gotten around to trying to create the recipe yet. Fast forward a few months to my good friend and ebook partner Sarah from freshfitnhealthy visiting! I knew we had to make something while we were together and the idea of spaghetti squash meatballs reemerged. Then we decided to add spicy tomato sauce to the mix! This turned out to be such a good decision! I love this recipe because it is a hybrid between pasta, meatballs and all things Italian!

Spaghetti Squash Meatballs with Spicy Tomato Sauce
  • 1 Spaghetti Squash
  • 3 tablespoons Sun Dried Tomatoes, julienned
  • 1¼ cup Italian Turkey Sausage, peal casing off if there is one (could also use ground turkey and Italian Seasonings)
  • ¼ cup Coconut Flour
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Garlic Powder
  • 20 Cherry Tomatoes
  • 1 Jalapeno, de-seeded
  • 1 teaspoon Red Pepper Flakes
  • ¼ cup Tomato Paste
  • 1 tablespoon Italian Seasoning
  • 1 tablespoon Sriracha
  • 1 teaspoon Baking Stevia
  1. Cut Spaghetti Squash crosswise NOT lengthwise (this makes it so both sides fit on one plate)
  2. Get a microwave safe plate and fill it with enough water to cover the bottom of the plate
  3. Scrape out the seeds
  4. Place the spaghetti squash halves open face down
  5. Microwave for approximately 8 minutes depending on size
  6. When it is cool enough to handle scrape the insides out with a fork
  7. Cut the spaghetti so the strands are not as long
  8. While the spaghetti squash is cooking place the the Italian turkey sausage on a pan sprayed with non-stick spray.
  9. Cook on medium heat until cooked through.
  10. Once turkey is cooked mix together all of the meatball ingredients and form into approximately 12 balls
  11. Place on a baking sheet with parchment paper and bake at 350 degrees Fahrenheit for approximately 20 minutes or until the balls are lightly browned and are held together.
  1. Blend all of the ingredients together until smooth.
