Sometimes you just want comfort food. Well, I was having one of those nights where comfort food was all I wanted. But, I wanted to keep it light and healthy. I used spaghetti squash as the spaghetti substitute, threw it all together and it turned out great!  Unfortunately, I didn’t measure, but you can just eye ball and decide how much you want of everything! Turkey Meatballs with Spaghetti Squash

Turkey Meatballs with Spaghetti Squash
Recipe type: Entree
Turkey Meatballs
  • Extra Lean Ground Turkey
  • Bread Crumbs (I make my own by toasting Ezekiel Bread and blending it in a food processor)
  • Whole Egg
  • Onion, diced
  • Salt and Pepper
  • Optional: Garlic Powder
  • All- Natural Marinara
Spaghetti Squash
  • 1 Whole Spaghetti Squash
Turkey Meatballs
  1. Mix together all the ingredients, but the marinara.
  2. Shape them into small balls.
  3. Place coconut oil in a skillet on high heat and let the oil get hot.
  4. Then add the meatballs.
  5. Reduce to medium heat and cook until browned on both sides about 15 mins turning frequently.
  6. While the meatballs are cooking place the marinara in a pot and bring to a simmer.
  7. Once meatballs are cooked add meatballs to the simmering sauce and cook uncovered for about 10 mins.
Spaghett Squash
  1. Directions:
  2. Cut Spaghetti Squash crosswise NOT lengthwise (this makes it so both sides fit on one plate)
  3. Get a microwave safe plate and fill it with enough water to cover the bottom of the plate
  4. Scrape out the seeds
  5. Place the spaghetti squash halves open face down
  6. Microwave for approximately 8 minutes depending on size
  7. When it is cool enough to handle scrape the insides out with a fork
  8. Serve like regular pasta
  9. Top the spaghetti squash with the turkey meatballs and sauce. Devour!
You could also use regular pasta.
